Even my boys couldn't stay out of it.
- 3 eggs, beaten
- 2 cups white sugar
- 1 cup veg oil
- 2 tsp vanilla extract
- 3 cups all purpose flour
- 3 tsps baking powder
- 2 tsp ground cinnamon
- 2 tsp ground nutmeg
- 2 cups shredded summer squash
Preheat oven to 325 degrees, grease 9 x 13 baking dish. In a large bowl, using an electric mixer (I used my new Kitchen Aid mixer that my hubby got for me) beat the eggs until fluffy, beat in sugar, oil and vanilla. Gradually mix in the flour, baking powder, cinnamon and nutmeg, fold in the squash.
Transfer to prepared baking pan. Bake 45 minutes in the preheated oven until a knife inserted in the center comes out clean.
